   
| Chicken and Sausage Jambalaya |

1 1/2 cups sliced celery
|
1 1/2 cups water
|
|
1 cup uncooked rice
|
1/2 cup barbeque sauce
|
|
1 cup chopped onion
|
1/2 tsp. garlic salt
|
|
1 cup chopped green pepper
|
1/4 tsp. cayenne pepper
|
|
1.14 oz. can tomatoes
|
1 1/2 cups cooked chicken
|
|
1/2 lb. smoked sausage
|
6 slices bacon, chopped
|
|
|
|
Fry bacon until crisp; stir in celery, rice, onion, and green pepper.
Cook and stir for 5 minutes.
Add tomatoes, sausage, water, barbeque sauce, garlic salt, and cayenne.
Bring to a boil; cover and simmer for 20 minutes. Add cubed chicken.
