Cut off the blossom end and clean out the veins and seeds.
Stuff with Monterey Jack Cheese.
Blend eggs (as many as you need for the amount of peppers you're using)
with
a fork to mix the white and yolk thoroughly.
Dip stuffed peppers individually into egg and roll in dry pancake mix.
Place in greased casserole.
Sprinkle with Ritz Cracker crumbs and drizzle with a little melted butter.
Bake at 350 degrees until peppers are tender. |
